These little sweet bites prove that good, nourishing food doesn’t have to be expensive. Made from just a handful of affordable, whole ingredients, they offer plant-based protein, healthy fats, and fiber. They don’t just satisfy hunger – they give you real energy, unlike that quick bag of chips.
Perfect for meal prep: enjoy them for breakfast, as dessert, or a snack in between. The base is nutty, the filling creamy, the topping a crisp layer of chocolate. And the best part? All you need is a blender and a few simple ingredients.
Before you start: slice two very ripe (!!) bananas and freeze them overnight – they’re the heart of the filling.
PREPARATION
- Soak the dates: Place dates in boiling water and soak for 10 minutes.
- Make the base: Blend all base ingredients until combined.
- Press into shape: Press the mixture into a flat dish or container.
- Melt the chocolate: Melt chocolate and coconut oil in a double boiler.
- Make the filling: Blend frozen banana and coconut cream until smooth and creamy, then spread over the base.
- Add the chocolate layer: Pour the melted chocolate on top.
- Decorate: Sprinkle with flaky sea salt and dried rose petals (optional).
- Chill: Freeze for 1 hour.
- Slice & enjoy: Cut into bars and let thaw slightly before eating.
