The Pulao spice blend is the aromatic heart of one of Afghanistan's most popular dishes – Pulao, a flavourful rice dish prepared in a variety of ways. The combination of the selected spices gives the dish a depth that tantalizes the senses. Trust me, you can't resist it!


In Afghanistan, this spice blend is often prepared in large quantities so that it is always on hand to enhance rice or other dishes. The Pulao spice blend is important not only for classic Pulao, but also for many of its variations, such as Kābuli Pulao or Māsh Pulao, which contain these spices as a basic ingredient. Whether the Pulao is prepared with just rice or with meat, vegetables, or fruit, this blend always brings the authentic Afghan flavor to the table. The spices used, including cardamom, cinnamon, and cumin, have a long history and were introduced to Afghanistan via trade routes, where they became an indispensable part of the cuisine.


For years, I relied on my mother to prepare this spice blend—always with the same handful of love that she then passed on to me. Today, I stand in my own kitchen, mixing the ingredients to my own specifications, giving me the perfect taste. The Pulao spice blend is naturally aromatic and incredibly versatile. It’s not only a perfect match for rice dishes like Pulao, but also works beautifully for seasoning vegetables, tofu (like in my Dürüm Vöner), soy chunks, or soy medallions. It adds a distinctive umami depth and a rich, meaty flavor to everything it touches!

  1. Add everything to a blender: Place all ingredients in a small blender.
  2. Blend well: Mix the spices until no chunks remain and the mixture reaches a fine consistency.
  3. Fill into a jar: Transfer the finished spice mix into a clean, sealable jar. This way, the aroma stays fresh.
