lemon ½
soy sauce 1 tbsp
Madras Curry ¾ tbsp
vegan crème fraîche 75 g
olive oil 1 tbsp
water 2-3 tbsp
Topping:
cucumber ½
pickled red onions to taste
dill ½ handful
salt to taste
pepper to taste
Also:
vegane butter 100 g
good (sourdough) bread 4 Slices
oilveoil to taste
sumac to taste

Sometimes the best recipes are born out of pure curiosity. I came across a few “whipped tofu” creations online – most of them sweet. Since I’m more of a savory type, I started experimenting. The result? This tofu curry cream: silky, flavorful and wonderfully refreshing.


The base: Madras curry and soy sauce, giving the cream a rich umami depth. A splash of lemon juice lifts it all with a gentle acidity. For extra freshness, I topped it with thin cucumber ribbons, pickled onions, and fresh dill crisp, tangy, aromatic. Piled onto a slice of perfectly toasted sourdough, it turns into a bite that truly has it all: crunch, creaminess, spice and freshness.


Fancy Slice is a little piece of art on a plate – Glamorous on the outside, rich and multi-layered within. It surprises, delights and transforms even the simplest slice of bread into a special moment. Perfect for brunch, lunch or simply as a quick “wow” snack in between.

PERSONAL RECOMMENDATION


I can highly recommend pickling the onions yourself – it’s a real game-changer for this recipe!


The tofu cream develops even more depth if you let it sit in the fridge overnight – that way, the spices fully infuse into the base. And please, treat yourself to a really good sourdough bread – it’s so worth it.

  1. Prepare the Veggie Mix: Combine cucumber with onions, lemon juice, dill, salt & pepper and let it sit for a few minutes.
  2. Blend the Tofu Cream: Puree all ingredients for the Whipped Curry Tofu Cream in a blender until smooth. Transfer to a piping bag, seal, and let rest in the fridge for 5 minutes.
  3. Toast the Bread: Fry the bread in vegan butter until golden brown on both sides.
  4. Assemble: For an extra aesthetic touch, pipe the tofu cream onto the bread in gentle, slalom-like swirls. Alternatively, you can simply spread it with a spoon.
  5. Topping & Finish: Top with the veggie mix, drizzle with olive oil, and finish with a sprinkle of sumac.
