I love preparing a few things on Sundays that I can have ready during the week. It's important to me to choose healthy and simple recipes – that way, I don't reach for unhealthy options in the often hectic everyday life. This wild berry jam is the perfect example. After work, when I need a little sweet snack before my workout: A rice cake, some homemade almond cream, and this wild berry jam – and I'm just happy.
In fact, this homemade jam is not only delicious but also packed with valuable nutrients. Berries are rich in antioxidants that protect your cells from damage, while flaxseeds, with their omega-3 fatty acids and fiber, support digestion and keep you full for longer. The natural sweetness comes from maple syrup – all without refined sugar. Try it out and see for yourself! Once you've made it, you'll want to always have it in the fridge.
PERSONAL RECOMMENDATION
This jam is so versatile: My favorite way to serve it is on a slice of whole grain bread with vegan butter, my homemade almond cream, and fresh banana slices. But it also works perfectly with yogurt, as a topping for pancakes, porridge, smoothies, or even ice cream.
PREPARATION
- Heat the berries: Slowly heat the frozen berries in a pan over medium heat until they soften.
- Mash the berries: Use a spoon to gently mash the softened berries, releasing their juice.
- Sweeten and thicken: Add flaxseeds, cinnamon, and maple syrup, and mix everything well. Let the mixture simmer gently for about 10 minutes. The flaxseeds will swell and create a wonderfully natural gelling effect.
- Let it cool: Remove the pan from the heat and let the jam cool for 15 minutes.
- Blend: Use an immersion blender to puree until you achieve a smooth consistency. If you prefer a chunkier jam, you can skip this step.
- Let it cool completely: Allow the jam to cool to room temperature.
- Jar it: Fill the jam into a clean jar and smooth it out with a clean spoon. Place the jar in the fridge for about an hour to allow the flaxseeds to give the jam a nice consistency.
